Description

Shade-grown and stone-ground to a fine, vibrant green powder, this matcha from Kagoshima in southern Japan whisks into a frothy cup with a smooth, grassy taste and a soft, lingering sweetness. In the weeks before harvest the leaves are sheltered from direct sun, deepening their colour and drawing out the amino acids that give matcha its mellow character. With its gentle caffeine and natural L-theanine, it is long valued for a sense of calm, focused energy. Let your water cool to around 75°C, then whisk briskly with a bamboo chasen until smooth. A quiet ritual to enjoy at O Cais or to take home, loose and unhurried.

Preparation
